'Easy Pesto Zoodles Recipe also available at http://www.easykidsfood.com/recipes/pesto-zoodles Ingredients: For pesto sauce: 1 cup fresh basil leaves 1 tablespoon pine nuts 1 clove garlic 1/4 cup extra-virgin olive oil 1/4 cup grated Parmesan cheese For zoodles: 1 medium zucchini (cut lengthwise into long and thin strands) For sautéing: 1 tablespoon olive oil 2 cloves garlic salt pepper For toppings: cherry tomatoes sliced cheese (cut into star shaped) fresh basil leaves Method: 1. To make the pesto sauce: combine fresh basil leaves, pine nuts, garlic, Parmesan cheese and olive oil in a blender or food processor until well minced. 2. To make zoodles/zucchini strands: cut zucchini into thin strands. 2. Preheat a skillet to medium heat, add olive oil, sauté garlic until soft. 3. Add zucchini strands, pesto sauce, and salt and pepper. Sauté briefly for a maximum 1 minute. Sautéing too long will make the zoodles too soft. 4. Transfer to a @kiddobloom plate and top with star shaped cheese and cherry tomato slices. 4. Serve immediately. Enjoy!'
