'It\'s that amazing time of year where gardens are flush with delicious fresh produce that is bursting with flavour! In this video I demonstrate how you can make a fresh vegan pesto with a few simple ingredients - basil, garlic, lemon juice, dry roasted unsalted almonds, and a little bit of oil. I also show how I make zucchini noodles. To pull this dish together I sauté some baby tomatoes with garlic, and these are put on top of the noodles that are slightly sautéed and tossed in the pesto. This dish can also be made completely raw and is just as delicious. Make the pesto with raw almonds and simply toss everything together without cooking. Like this recipe? Like
